Ingredients
Sweet Potatoes:
2 large sweet potatoes, peeled and cut into 1-inch cubes
Garlic Parmesan Coating:
4 cloves garlic, minced
1/4 cup grated Parmesan cheese
2 tablespoons olive oil
1 tablespoon dried Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
Optional:
2 tablespoons chopped fresh parsley, for garnish
1 tablespoon melted butter, for extra richness
Instructions
Prepare Sweet Potatoes: Wash, peel, and cut sweet potatoes into 1-inch cubes. Place in a large bowl.
Make Garlic Parmesan Coating: In a small bowl, combine minced garlic, Parmesan cheese, Italian seasoning, salt, and pepper. Stir well.
Coat Sweet Potatoes: Drizzle olive oil over the sweet potatoes. Pour the garlic Parmesan mixture over the sweet potatoes. Toss until evenly coated.
Roast: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Spread sweet potatoes in a single layer on the baking sheet.
Cook: Roast for 20-25 minutes, or until tender and slightly caramelized, flipping halfway through.
Finish: Remove from oven and transfer to a serving bowl. Drizzle with melted butter (optional). Garnish with chopped fresh parsley (optional).
Serve: Serve immediately and enjoy!
