This one-skillet garlic parmesan chicken and potatoes recipe is a quick and delicious meal option. Tender seasoned chicken and baby potatoes are cooked together and smothered in a creamy garlic parmesan wing sauce, then topped with melted mozzarella cheese. Ingredients

For the Chicken:

  • 2 tablespoons olive oil
  • 1 pound chicken tenderloins or breasts, cut into bite-size pieces
  • 1 ½ teaspoons paprika
  • 1 ½ teaspoons poultry seasoning
  • 1 teaspoon black pepper

For the Potatoes:

  • 2 tablespoons olive oil
  • 1 pound baby potatoes, halved

Additional Ingredients:

  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • ½ cup garlic parmesan wing sauce
  • 1 cup shredded mozzarella

Instructions

  1. Preheat and Prepare: Preheat the oven to 400°F and prepare a baking sheet.
  2. Season Chicken and Potatoes: Season chicken and potatoes with olive oil and a mixture of paprika, poultry seasoning, and black pepper.
  3. Cook Potatoes: Roast seasoned potatoes in the oven for 20 minutes.
  4. Cook Chicken: Cook seasoned chicken in a skillet until browned and fully cooked.
  5. Combine Ingredients: Add butter, garlic, roasted potatoes, and garlic parmesan sauce to the skillet with chicken.
  6. Melt Cheese: Sprinkle mozzarella cheese over the chicken and potatoes, cover, and melt for about 5 minutes.

Notes

  • Store leftovers covered in the fridge for up to 3 days.
  • Any type of potatoes cut into 1″ cubes can be used.
  • Feel free to use your preferred cheese; shaved parmesan is a good option.
  • To air fry the potatoes, cook at 400°F for 20 minutes.
