  • 1 ¼ lb sirloin steak, cut into ½ inch cubes

Instructions

  1. Prep: Begin by prepping all your ingredients—cut the potatoes into ½ inch cubes, mince the garlic, chop the steak into cubes, and gather your dried herbs and seasonings.
  2. Heat the skillet: Place a large cast iron skillet over medium heat. Add the olive oil and two tablespoons of the ghee to the pan and allow them to heat and melt together.
  3. Cook the potatoes: Once the ghee is melted, add the cubed potatoes to the skillet. Sprinkle the minced garlic, dried thyme, oregano, salt, and pepper evenly over the top. Let the potatoes cook undisturbed for 2-3 minutes, then stir to incorporate the seasonings.
  4. Brown and tenderize potatoes: Continue cooking the potatoes, stirring every 1-2 minutes to prevent sticking, until they become golden brown and tender when pierced with a fork—this should take about 8-10 minutes depending on the size of your potatoes and how crowded they are in the pan.
  5. Remove potatoes: Once cooked, transfer the potatoes and any browned bits from the skillet onto a plate and set aside.
  6. Sear the steak: Increase the heat to medium-high and add the remaining two tablespoons of ghee to the skillet. When melted, add the steak cubes and season lightly with salt and pepper. Let them sear undisturbed for at least 2 minutes to develop a golden crust, then stir and cook for an additional 1-2 minutes until the pieces are browned all over.
  7. Combine and finish: Return the cooked potatoes to the skillet with the steak, stirring everything together to combine flavors. Adjust seasoning with additional salt and pepper as needed. Remove from heat.
