Ingredients

Bread:

  • 8 slices thick-cut bread (e.g., Texas toast or your favorite)

Garlic Butter:

  • 1/2 cup unsalted butter, softened
  • 23 cloves garlic, minced
  • 1 tsp dried Italian herbs (or a mix of parsley, oregano, basil)
  • 1/2 tsp red pepper flakes (optional)

Grilled Chicken:

  • 2 boneless, skinless chicken breasts
  • Olive oil (for brushing)
  • Salt and black pepper, to taste

Filling and Toppings:

  • 12 large ripe tomatoes, sliced
  • Romaine or green leaf lettuce
  • Mayonnaise
  • Optional toppings: sliced cheddar, provolone, Swiss cheese, or avocado

Instructions

  1. Grill the Chicken

    Preheat a grill pan or outdoor grill over medium-high heat. Brush chicken breasts with olive oil and season with salt and pepper. Grill for 5–6 minutes per side, or until internal temperature reaches 165°F (75°C). Let rest for a few minutes, then slice thinly across the grain.

  2. Prepare Garlic Butter

    In a small bowl, combine softened butter, minced garlic, dried herbs, and red pepper flakes (if using). Mix until fully blended.

  3. Toast the Bread

    Spread garlic butter on one side of each slice of bread. Toast the buttered side down on a skillet or griddle over medium heat until golden and crisp, about 2–3 minutes.

  4. Prep the Fillings

    Wash and dry the lettuce. Slice the tomatoes and lightly season with salt and pepper.
