Ingredients
For the Caramelized Onions:
2 large yellow onions, sliced
2 Tablespoons butter
1/4 teaspoon salt
1 Tablespoon balsamic vinegar
1 Tablespoon Worcestershire sauce
1/2 teaspoon dried thyme
For the Chicken:
1 cup shredded gruyere cheese
2 large chicken breasts, sliced in half or 4 small breasts
1/2 cup gluten-free all-purpose flour
1 teaspoon salt
1/2 teaspoon pepper
1/2 cup chicken broth
1 Tablespoon dijon mustard
For Serving:
2 cups cooked wild rice
1 1/2 cups peas
1/4 cup chopped parsley
Instructions
Caramelize the Onions: Heat a skillet with butter over medium heat. Add onions and salt, sauté until brown. Cook on low for 20 minutes. Mix in vinegar, Worcestershire, and thyme. Set aside.
Prepare the Chicken: Combine flour, salt, and pepper. Dredge chicken, cook in the skillet. Set aside when cooked.
Make the Sauce: Add broth and dijon to the skillet, simmer until reduced. Return chicken to coat in sauce.
Assemble: Top chicken with onions and cheese, melt the cheese. Serve over rice with peas and parsley.
