Ingredients

For the Caramelized Onions:

  • 2 large yellow onions, sliced
  • 2 Tablespoons butter
  • 1/4 teaspoon salt
  • 1 Tablespoon balsamic vinegar
  • 1 Tablespoon Worcestershire sauce
  • 1/2 teaspoon dried thyme

For the Chicken:

  • 1 cup shredded gruyere cheese
  • 2 large chicken breasts, sliced in half or 4 small breasts
  • 1/2 cup gluten-free all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup chicken broth
  • 1 Tablespoon dijon mustard

For Serving:

  • 2 cups cooked wild rice
  • 1 1/2 cups peas
  • 1/4 cup chopped parsley

Instructions

  1. Caramelize the Onions: Heat a skillet with butter over medium heat. Add onions and salt, sauté until brown. Cook on low for 20 minutes. Mix in vinegar, Worcestershire, and thyme. Set aside.
  2. Prepare the Chicken: Combine flour, salt, and pepper. Dredge chicken, cook in the skillet. Set aside when cooked.
  3. Make the Sauce: Add broth and dijon to the skillet, simmer until reduced. Return chicken to coat in sauce.
  4. Assemble: Top chicken with onions and cheese, melt the cheese. Serve over rice with peas and parsley.
