Ingredients

  • 4 1/2 cups flour (you may need less or a little more)

  • 1/4 cup warm water (110F)
  • 2 teaspoons kosher salt
  • 1/4 teaspoon baking soda
  • 2 1/4 cups warm milk (110F)

For Greasing:

  • Butter
  • Cornmeal

Instructions

  1. Activate yeast: Mix the yeast, honey, and water. Set aside.
  2. Blend dry ingredients: Stir the salt, baking soda, and 1 cup of flour together.
  3. Add the milk to the yeast mixture: Blend well.
  4. Blend the dough: Add the remaining flour or enough to give you a soft, goopy dough and beat.
  5. Soft dough: The dough should be very soft and goopy.
  6. Add to loaf pans: Spoon the dough into greased and cornmeal-dusted loaf pans.
  7. Let rise: Allow the dough to double in size, about 30-45 minutes.
  8. Preheat the oven: Preheat to 425F.
  9. Dust and bake: Dust the tops of the loaves with cornmeal, then bake until golden and hollow-sounding when tapped.
  10. Cool and slice: Allow to cool before slicing.
