Ingredients
For the sauce:
2 tablespoons rice vinegar or 3 tablespoons Chinese black vinegar
2 tablespoons plus 2 teaspoons vegetable oil, divided
1/4 cup water
8 ounces cremini mushrooms, sliced 1/4-inch thick
Kosher salt
8 ounces asparagus, cut into 1-inch pieces
1 medium carrot, peeled and sliced
1 tablespoon finely chopped fresh ginger
2 medium scallions, thinly sliced
Instructions
Make the sauce: Whisk all the sauce ingredients together in a small bowl until cornstarch is dissolved; set aside.
Make the stir-fry: Heat oil in a pan, fry potstickers until golden, add water, cook covered, then uncover and cook until golden. Remove potstickers. Stir-fry mushrooms, then asparagus, carrot, and ginger. Return potstickers to the pan, add sauce, stir-fry until thickened. Serve sprinkled with scallions.
