  • ¼ cup ghee or butter, divided
  • 1 tablespoon olive oil
  • 1 lb Yukon Gold potatoes, cut into ½ inch cubes

  • ½ teaspoon sea salt, plus more to taste

Instructions

  1. Prep: Prepare all ingredients by cutting the Yukon Gold potatoes into ½ inch cubes and cubing the sirloin steak into ½ inch pieces. Mince the garlic cloves.
  2. Heat the Skillet: Place a large cast iron skillet over medium heat. Add the olive oil and two tablespoons of ghee to the hot pan and allow the ghee to melt.
  3. Cook the Potatoes: Add the cubed potatoes to the skillet. Sprinkle minced garlic, dried thyme, dried oregano, ½ teaspoon sea salt, and ¼ teaspoon ground black pepper evenly over the potatoes. Cook for 2-3 minutes, then stir. Continue cooking and stirring every 1-2 minutes until potatoes are golden brown and fork tender, about 8-10 more minutes. Avoid crowding the pan to ensure even cooking. Once done, remove the potatoes and any browned bits from the pan and set aside.
  4. Sear the Steak: Increase heat to medium-high. Add the remaining two tablespoons of ghee to the skillet and let it melt. Add the steak cubes, season with salt and pepper, and sear without stirring for at least 2 minutes to develop a good crust. Then stir and cook for an additional 1-2 minutes until golden brown all over.
  5. Combine and Finish: Return the cooked potatoes to the pan with the steak bites. Stir to combine everything evenly. Taste and adjust seasoning with additional salt and pepper if needed. Garnish with freshly chopped parsley before serving.
