Ingredients

FOR THE SOUP:

  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 4 cups low-sodium chicken broth
  • 1 (14.5-ounce) can diced tomatoes
  • 1 (10-ounce) can Rotel (diced tomatoes with green chilies)
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 cup frozen or canned corn
  • 2 cups cooked shredded chicken
  • 1/2 cup heavy cream
  • 4 ounces cream cheese, softened

FOR TOPPING:

  • Tortilla strips or crushed tortilla chips
  • Shredded cheddar or Monterey Jack cheese
  • Fresh cilantro, chopped
  • Diced avocado
  • Lime wedges
  • Sour cream

Instructions

  1. Step 1: Sauté the Aromatics – In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until softened, about 3-4 minutes. Stir in the minced garlic and cook for another 30 seconds until fragrant.
  2. Step 2: Add the Spices & Broth – Sprinkle in the cumin, smoked paprika, chili powder, oregano, salt, and black pepper. Stir well to coat the onions and garlic. Pour in the chicken broth, diced tomatoes, Rotel, black beans, and corn. Give it a good stir to combine everything.
  3. Step 3: Simmer the Soup – Bring the soup to a gentle boil, then reduce the heat to low and let it simmer for about 15 minutes. This allows all the flavors to meld together beautifully.
  4. Step 4: Add the Chicken & Creamy Elements – Stir in the shredded cooked chicken. Reduce the heat to low and add the heavy cream and softened cream cheese. Stir continuously until the cream cheese melts completely and the soup becomes smooth and creamy.
