Ingredients

Pie Crust:

  • 1 package refrigerated pie crusts

Filling:

  • 2 medium Granny Smith apples
  • 1/4 cup sugar
  • 1/4 teaspoon ground cinnamon
  • 1 tablespoon lemon juice
  • 1 tablespoon butter
  • 1/4 cup caramel sauce

Assembly:

  • 1 egg, beaten
  • Additional sugar for sprinkling

Instructions

  1. Prep the Ingredients: Preheat the oven to 375°F (190°C). Peel, core, and chop the apples into small pieces. In a bowl, toss the apples with sugar, cinnamon, and lemon juice.
  2. Cook the Apples: In a skillet, melt butter over medium heat. Add the apple mixture and cook until the apples are tender, about 5-7 minutes. Remove from heat and let it cool slightly.
  3. Assemble the Empanadas: Roll out the pie crusts and cut into circles. Spoon some apple filling onto each circle, drizzle with caramel sauce, fold over, and crimp the edges with a fork.
  4. Bake: Brush the empanadas with beaten egg, sprinkle with sugar, and bake for 20-25 minutes until golden brown.
