These easy caramel apple dessert cups are a delightful treat that combines the flavors of sweet apples, creamy caramel mousse, and buttery vanilla wafer crust. Perfect for parties or a sweet indulgence!

Ingredients

For Cinnamon Apples:

  • 4 cups apples (peeled and chopped)
  • ½ cup light brown sugar
  • 1 tsp cinnamon

For Vanilla Wafer Crust:

  • 2 cups vanilla wafer crumbs
  • ¼ cup salted or unsalted butter (melted)

For Caramel Mousse:

  • 1 pkg instant vanilla pudding mix (3.4 ounces)
  • 1 cup milk
  • ⅓ cup salted caramel sauce
  • 1 ½ cups heavy cream
  • additional caramel sauce for garnish

Instructions

  1. Cinnamon Apples: In a saucepan, cook apples, brown sugar, and cinnamon until soft. Set aside to cool.
  2. Vanilla Wafer Crust: Combine wafer crumbs and melted butter. Press into plastic cups.
  3. Caramel Mousse: Combine pudding mix and milk. Add caramel sauce and whip with cream until thick.
  4. Assembly: Pipe mousse into cups, top with cinnamon apples, and drizzle with caramel sauce. Chill and serve.
