These Easy Baked Salmon Sushi Cups are a delightful fusion of flavors, combining tender salmon with sushi rice in convenient, bite-sized portions. Perfect for a snack or party appetizer, these sushi cups are sure to impress your guests with their unique presentation and delicious taste.

Ingredients

For the Salmon Mixture:

  • 1 lb salmon, cubed
  • 1 tbsp light soy sauce
  • 1 tbsp Kewpie Mayo
  • 1 tbsp Sriracha
  • 1 tsp sesame oil

For the Sushi Rice:

  • 1 ½ cups uncooked sushi rice
  • 1 tbsp rice vinegar
  • 2 tsp white sugar

Additional Ingredients:

  • 3 large nori sheets
  • furikake, for garnish
  • 1 green onion, for garnish
  • cooking spray

Instructions

  1. Cook Sushi Rice: Prepare sushi rice according to package instructions.
  2. Prepare Vinegar Mixture: In a microwave-safe bowl, combine rice vinegar and sugar. Microwave until sugar dissolves. Pour over cooked rice and mix well. Set aside.
  3. Preheat Oven: Preheat oven to 400°F.
  4. Prepare Salmon Mixture: Mix diced salmon with soy sauce, Kewpie mayo, Sriracha, and sesame oil. Set aside.
  5. Cut Nori Sheets: Cut nori sheets into squares to fit muffin tins.
  6. Assemble Sushi Cups: Grease muffin tin, press sushi rice into each cup, then add salmon mixture on top.
  7. Bake: Bake at 400°F for 15 minutes until salmon is cooked and tops are golden brown.
  8. Garnish and Serve: Drizzle with sriracha or spicy mayo, sprinkle with furikake and green onions. Serve and enjoy!
