This snacky adult lunchable puts the fun back into lunch with nourishing foods like eggs, veggies, and hummus. It has the nostalgia of lunchables but revamped for grown-ups.

Ingredients

Eggs:

  • 2 eggs

Everything But The Bagel seasoning:

  • Sprinkle of Everything But The Bagel seasoning

Sliced cucumbers or vegetables of choice:

  • ½ cup sliced cucumbers or vegetables of choice

Grapes or fruit of choice:

  • ½ cup grapes or fruit of choice

Crackers:

  • ½ cup crackers

Aged cheddar cheese or cheese of choice:

  • 2 ounces aged cheddar cheese or cheese of choice

Hummus:

  • 2 tablespoons hummus

Instructions

  1. Boil Eggs: Place eggs in a pot, cover with cold water, bring to a boil. Remove from heat and let stand for 10-12 minutes. Drain and cool eggs.
  2. Prepare Eggs: Peel and cut eggs in half. Sprinkle with Everything But The Bagel seasoning.
  3. Assemble Lunchable: Arrange eggs, cucumbers, grapes, cheese, and hummus in a container.
