Ingredients

Mozzarella Bombs:

  • 8 mozzarella sticks, halved to make 16 pieces
  • ½ lb ground beef, cooked and seasoned
  • 4 strips turkey bacon, cooked and finely crumbled
  • ½ cup shredded cheddar cheese
  • ½ cup finely chopped dill pickles
  • 1 tbsp dill pickle juice

Assembly:

  • 1 can refrigerated biscuit dough
  • 1 egg, beaten
  • ¾ cup panko breadcrumbs
  • 2 tbsp melted butter
  • 1 tsp garlic powder
  • 1 tsp dried dill
  • Optional: fresh chopped dill or parsley for garnish

Instructions

  1. Preheat: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Flatten Dough: Flatten each piece of dough into a 3-inch circle. Spoon a portion of the beef mixture onto the dough, place a mozzarella stick piece on top.
  3. Wrap: Wrap the dough around the filling, sealing the edges. Use beaten egg as adhesive if needed. Form into a ball.
  4. Breadcrumb Coating: Mix panko, garlic powder, and dried dill. Brush each ball with melted butter and roll in the breadcrumb mixture.
  5. Bake: Bake for 13-16 minutes until golden brown, or air fry for 8-10 minutes, shaking halfway through.
  6. Serve: Allow to cool slightly, then garnish if desired. Serve with dipping sauces.
