Ingredients

Chicken:

  • 2 medium chicken breasts (boneless and skinless)

Rice:

Corn Mixture:

  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 small red onion (diced)
  • 2 cloves garlic (minced)
  • Juice of 1 lime
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 2 tablespoons olive oil

Toppings:

  • 1/4 cup Greek yogurt (or sour cream)
  • 1/4 cup Cotija cheese or feta (crumbled)
  • 1/4 cup fresh cilantro (chopped)
  • 1 avocado (sliced)

Instructions

  1. Cook the Rice: Prepare the rice according to package instructions. Once cooked, set it aside and keep warm.
