Light and golden peach fritters with a crisp exterior and tender, juicy interior, bursting with the natural sweetness of fresh ripe peaches.

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/3 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Vegetable oil, for frying
  • 2 cups fresh ripe peaches, peeled and sliced
  • Powdered sugar or glaze, for serving (optional)

Instructions

  1. Whisk together the flour, sugar, baking powder, salt, and cinnamon in a large bowl.
  2. In another bowl, beat the egg, then stir in the milk and vanilla extract.
  3. Fold the wet ingredients into the dry ingredients until just combined. Do not overmix.
  4. Gently stir in the peach slices to coat them evenly in the batter.
  5. Heat about 1 inch of vegetable oil in a heavy skillet over medium heat until it reaches 350 °F (175 °C).
  6. Using tongs or a slotted spoon, carefully place a few battered peach slices into the hot oil, leaving space between fritters.
  7. Fry each fritter for about 2 minutes per side, until golden brown, then transfer to a wire rack or paper towel-lined plate.
  8. Repeat with the remaining batter, adjusting heat to maintain 350 °F.
  9. Dust fritters with powdered sugar or drizzle with glaze before serving.

Notes

  • Use ripe but firm peaches to prevent mushy fritters.
  • Fry in small batches to maintain oil temperature and ensure even cooking.
  • Do not prepare the batter in advance as the baking powder activates immediately.
  • Store leftovers in an airtight container at room temperature for up to a day.
  • Reheat in a 350 °F oven for 5–7 minutes to regain crispness.
