Cucumber Sandwiches are a delightful and easy-to-make finger food, perfect for a light snack or to serve with tea. The creamy filling with fresh herbs and crisp cucumber slices sandwiched between soft bread slices make for a refreshing treat.

Ingredients

Cream Cheese Filling:

  • 8 oz cream cheese, softened
  • 1/4 cup mayonnaise
  • 2 teaspoons fresh dill, chopped
  • 1 teaspoon fresh green onions, chopped
  • 1 teaspoon lemon zest
  • 1 teaspoon lemon juice
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon onion powder
  • Salt & pepper, to taste

Additional Ingredients:

  • 1 long English cucumber, thinly sliced
  • 1 loaf sliced bread, crusts removed

Instructions

  1. Prepare the Cream Cheese Filling: In a small bowl, whisk together softened cream cheese and mayonnaise until smooth. Stir in chopped herbs, garlic powder, onion powder, lemon juice, and zest. Season with salt and pepper.
  2. Assemble the Sandwiches: Spread the cream cheese mixture onto the bread slices. Layer thinly sliced cucumbers over half of the bread slices. Top with additional herbs if desired.
  3. Cut and Serve: Top with the remaining bread slices. Remove crusts and cut each sandwich into three pieces using a sharp knife. Serve immediately or store in the fridge for up to 24 hours in an airtight container.
