Ingredients

Chicken:

  • pounds chicken breast, cut into bite-size pieces

Orange Sauce:

  • ½ cup orange marmalade
  • ¼ cup ketchup
  • 1 tablespoon brown sugar
  • 1 tablespoon rice wine vinegar
  • 3 tablespoons low-sodium soy sauce
  • 1 teaspoon grated fresh ginger or ½ teaspoon dried ginger
  • ¼ to ½ teaspoon red pepper flakes
  • ¼ cup water
  • 2 tablespoons cornstarch

Garnish:

  • White sesame seeds (optional)
  • Chopped green onion (optional)

Instructions

  1. Add chicken to crockpot: Place chicken pieces in the crockpot.
  2. Prepare the sauce: In a bowl, mix together orange marmalade, ketchup, brown sugar, vinegar, soy sauce, ginger, and red pepper flakes. Pour the sauce over the chicken.
  3. Cook: Cook on low for 4 hours or high for 2 hours.
  4. Thicken the sauce: Combine water and cornstarch. Add the mixture to the crockpot during the last 10 minutes of cooking to thicken the sauce.
  5. Serve: Serve the chicken over rice and garnish with white sesame seeds and green onions.

Notes

  • If you prefer spicier chicken, add ½ teaspoon more red pepper flakes for extra heat.
  • Don’t forget to spoon out any remaining sauce from the crockpot to drizzle over the chicken and rice for extra flavor.
