This hearty Crockpot Chicken Parmesan Soup combines tender chicken, savory tomatoes, Italian herbs, creamy cheese, and rotini pasta for a comforting and flavorful meal. Slow-cooked to perfection, this soup is topped with crispy buttery breadcrumbs and melted mozzarella for the classic Chicken Parmesan taste in a warm, cozy bowl.

Ingredients

Soup Ingredients

  • 3 boneless chicken breasts
  • 1 tablespoon minced garlic
  • 1 (28 oz) can crushed tomatoes
  • 1 (15 oz) can tomato sauce
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 teaspoons Italian seasoning
  • 4 cups chicken broth
  • 1 cup freshly shaved Parmesan cheese
  • 1 cup heavy whipping cream
  • 8 oz uncooked rotini pasta

Topping Ingredients

  • 1/2 cup bread crumbs
  • 1 tablespoon butter
  • 1 1/2 cups shredded Mozzarella cheese

Instructions

  1. Combine Ingredients in Crockpot: Add the boneless chicken breasts, minced garlic, crushed tomatoes, tomato sauce, salt, black pepper, Italian seasoning, and chicken broth into the crockpot, ensuring all ingredients are evenly distributed.
  2. Cook Chicken Soup: Cover the crockpot with its lid and cook on low for 6 to 8 hours or on high for 3 to 4 hours until the chicken is tender and fully cooked.
  3. Shred Chicken and Add Remaining Ingredients: Remove the chicken breasts and shred them using two forks or meat shredders. Return the shredded chicken to the crockpot, then stir in freshly shaved Parmesan cheese, heavy whipping cream, and uncooked rotini pasta. Cover again and cook on low for 30 minutes or on high for 15 minutes to cook the pasta.
  4. Prepare Breadcrumb Topping: While the pasta cooks, melt butter in a saucepan over medium heat on the stovetop. Add the bread crumbs and sauté until golden brown and crispy, stirring frequently to prevent burning.
  5. Serve and Garnish: Ladle the soup into individual bowls. Top each serving generously with shredded mozzarella cheese and the toasted breadcrumb mixture. Serve hot and enjoy the classic Chicken Parmesan flavors in every spoonful.

Notes

  • Using freshly shaved Parmesan cheese enhances the flavor significantly compared to pre-grated versions.
  • The bread crumb topping can be made ahead and stored in an airtight container.
  • For a lower-fat alternative, substitute heavy cream with half-and-half or whole milk, but the soup will be less creamy.
  • You can double the recipe for larger gatherings, just adjust crockpot size accordingly.
  • Ensure the rotini pasta is cooked al dente to prevent it from becoming mushy during slow cooking.
