Ingredients

For the Chili:

  • 2 pounds boneless skinless chicken breasts, about 3 breasts
  • 1/4 cup butter, cubed
  • 2/3 cup buffalo sauce
  • 2 cups chicken broth
  • 1/2 cup diced onion, about 1/2 small onion
  • 1 can (14.5 ounces) fire-roasted diced tomatoes
  • 1 can (15 ounces) corn, drained
  • 1 can (15 ounces) white beans, drained
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon dill
  • 1 teaspoon oregano
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 8 ounces cream cheese, room temperature

Instructions

  1. Place Butter and Chicken: Place cubed butter in the bottom of the crockpot, then add chicken breasts on top.
  2. Add Ingredients: Pour in buffalo sauce, chicken broth, diced onion, fire-roasted diced tomatoes, corn, white beans, garlic powder, cumin, dill, oregano, paprika, salt, and pepper.
  3. Cook: Cover and cook on low for 5-6 hours or high for 3-4 hours.
  4. Shred Chicken and Add Cream Cheese: Shred the cooked chicken, return it to the crockpot, add cream cheese, and cook until melted.
  5. Serve: Serve hot with your favorite toppings.

Notes

  • This chili can be topped with shredded cheese, sliced jalapenos, or a dollop of sour cream.
  • For extra heat, increase the amount of buffalo sauce to suit your taste.
