Ingredients

    Beef:

  • 34 lbs beef chuck roast
  • Seasoning:

  • 1 onion, thinly sliced
  • 3 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • For Serving:

  • 46 hoagie rolls
  • 6 slices provolone cheese

Instructions

  1. Step 1: Prepare the Beef – Season beef chuck roast with salt, pepper, garlic powder, onion powder, and dried thyme. Optionally, sear in a skillet.
  2. Step 2: Assemble Ingredients in the Slow Cooker – Layer onions, place seasoned beef on top, add beef broth, Worcestershire sauce, and soy sauce.
  3. Step 3: Slow Cook to Perfection – Cook on low for 7-8 hours or high for 4-5 hours until tender.
  4. Step 4: Shred the Beef – Remove, shred, and return beef to the slow cooker.
  5. Step 5: Toast the Hoagie Rolls – Lightly toast the rolls until golden brown.
  6. Step 6: Assemble the Sandwiches – Pile beef on rolls, add provolone, and melt under the broiler.
  7. Step 7: Serve with Au Jus – Strain cooking liquid, serve au jus on the side for dipping.

Notes
