These Crispy Pineapple Chicken Sandwiches are a delightful mix of flavors and textures, featuring juicy chicken, tangy jalapeño slaw, and a sweet and spicy hot honey glaze, all sandwiched between soft brioche buns. Perfect for a delicious lunch or dinner option!

Ingredients

For the Chicken:

  • 2 large chicken breasts, halved horizontally
  • 1 cup buttermilk
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and pepper
  • 1 cup flour
  • 1 cup panko breadcrumbs
  • Oil for frying
  • 4 pineapple rings

For the Jalapeño Slaw:

  • 1 cup shredded cabbage
  • ½ cup shredded carrots
  • 1 jalapeño, finely sliced
  • 2 tbsp mayo
  • 1 tbsp lime juice
  • Salt and pepper to taste

For the Hot Honey Glaze:

  • ¼ cup honey
  • 1 tsp hot sauce
  • ½ tsp red pepper flakes

For Assembly:

  • 4 brioche buns
  • Butter or mayo for toasting buns

Instructions

  1. Marinate Chicken: Combine buttermilk, garlic powder, paprika, salt, and pepper. Add chicken and marinate for 30 minutes or more.
  2. Prepare Slaw: Toss cabbage, carrots, and jalapeños with mayo, lime juice, salt, and pepper. Chill.
  3. Make Hot Honey Glaze: Warm honey, hot sauce, and red pepper flakes in a small pan. Set aside.
  4. Bread & Fry Chicken: Mix flour and panko in a bowl. Dredge marinated chicken in the dry mixture. Fry in hot oil (350°F) until golden and cooked through. Drain on paper towels.
  5. Grill Pineapple: Grill or sear pineapple rings in a pan until caramelized.
  6. Assemble Sandwiches: Toast buns. Layer crispy chicken, grilled pineapple, jalapeño slaw, and drizzle with hot honey glaze.
