These oven-fried potatoes and onions are a delicious and easy side dish that pairs perfectly with any main course. Crispy on the outside and tender on the inside, these flavorful potatoes are sure to be a hit with your family and friends.

Ingredients

Potatoes:

  • 2 lbs potatoes, sliced

Onion:

  • 1 onion, quartered

Oil Mixture:

  • 1/2 cup canola oil
  • 1/2 cup olive oil

Seasonings:

  • 4 cloves garlic, chopped
  • 1 onion soup mix packet
  • 1 tbsp rosemary
  • 1 tbsp black pepper

Instructions

  1. Toss Potatoes and Onions: In a large bowl, toss the sliced potatoes and quartered onion with the canola oil, olive oil, chopped garlic, onion soup mix packet, rosemary, and black pepper.
  2. Roast Covered: Preheat the oven to 450°F. Spread the potato mixture in a single layer on a baking sheet, cover with foil, and roast for 25 minutes.
  3. Finish Roasting: Remove the foil and continue to roast for an additional 15-30 minutes or until the potatoes are crispy and golden brown.
