Ingredients

Caesar Dressing

  • ½ cup full-fat mayonnaise
  • 3 tablespoon Greek yogurt
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 2 tablespoon lemon juice
  • ¼ cup Parmesan cheese, freshly grated
  • 12 garlic cloves, minced
  • ¼ teaspoon black pepper
  • Pinch of sea salt

Chicken

  • 5 chicken cutlets
  • sea salt to taste
  • ground black pepper to taste
  • Oil for frying

Flour Mixture

  • ⅓ cup all-purpose flour
  • ½ teaspoon salt
  • ¾ teaspoon smoked paprika

Egg Mixture

  • 2 eggs
  • ¼ teaspoon salt

Breadcrumbs Mixture

  • ¾ cup panko crumbs
  • ¼ cup breadcrumbs
  • 1 teaspoon dried parsley
  • ½ teaspoon ground black pepper
  • ½ teaspoon sea salt
  • ½ dried oregano
  • 1 teaspoon garlic powder
  • ¼ cup Parmesan cheese, freshly grated

Assembly

  • 2 romaine hearts, chopped
  • 12 French baguettes
  • Parmesan cheese, freshly grated

Instructions

  1. Prepare Caesar Dressing: Mix all dressing ingredients until smooth. Toss 4–5 tablespoons with romaine, refrigerate both.
  2. Bread Chicken: Pound cutlets to even thickness, season, and bread in flour, eggs, and breadcrumb mix.
  3. Fry Chicken: Fry breaded cutlets until golden and crispy. Drain on a wire rack.
  4. Assemble Sandwiches: Spread dressing on baguette halves, add chicken, Caesar salad, extra Parmesan. Serve with fries.

Notes

  • If using whole chicken thighs or breasts, slice horizontally and pound to even thickness.
  • Assemble the sandwich just before serving to prevent sogginess. Toasting the baguette lightly is optional.
  • Maintain oil temperature around 175–180°C (350–360°F) for proper frying.
