Ingredients
Cookie Dough:
1 cup unsalted butter, softened
1 ½ cups granulated sugar
1 large egg
1 tbsp vanilla extract
2 ½ cups all-purpose flour
1 tsp baking soda
½ tsp salt
1 ½ cups toffee bits
Coating:
Extra sugar for rolling
Instructions
Preheat the oven: Set oven to 350°F (175°C). Line baking sheets with parchment paper.
Make the dough: In a large bowl, cream the butter and sugar until light and fluffy. Add the egg and vanilla; beat until smooth. In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet, mixing just until combined. Fold in the toffee bits.
Shape and coat: Scoop dough into 1-inch balls and roll in granulated sugar. Place them 2 inches apart on the prepared baking sheets.
Bake to perfection: Bake for 10-12 minutes, or until the edges are golden and the centers are slightly underbaked. They’ll firm up as they cool.
Cool and enjoy: Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
