Ingredients

For the Chicken:

  • 4 boneless, skinless chicken breasts
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil

For the Rice:

  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1/2 teaspoon salt

For the Creamy Sauce:

  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups whole milk
  • 1/2 cup chicken broth
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon thyme
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season and cook the chicken: Season the chicken breasts and sear in a skillet until golden brown. Set aside.
  2. Cook the rice: Boil chicken broth, add rice, and simmer until tender. Fluff with a fork.
  3. Make the creamy sauce: Melt butter, whisk in flour, add milk and broth, then stir in seasonings and cheeses until thickened.
  4. Smother the chicken: Return chicken to skillet, spoon sauce over, cover, and simmer until fully cooked.
  5. Assemble and serve: Plate rice, top with chicken and sauce, garnish with parsley, and serve.

Notes

  • For extra flavor, add sautéed mushrooms or caramelized onions to the sauce.
  • For a thicker sauce, simmer longer or add more cheese.
  • Swap white rice for brown rice for a nuttier flavor, adjusting cooking time.
