This creamy one-pot beef and potato casserole is a rich, hearty, and comforting dish made with layers of savory ground beef, tender potatoes, and a velvety sauce all baked together in one dish. Perfect for weeknight dinners and family meals.

Ingredients

Ground Beef Mixture:

  • 1 lb ground beef
  • 1 small onion, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika

Creamy Sauce:

  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup whole milk or heavy cream
  • 1/2 cup sour cream (optional for extra creaminess)

Additional Ingredients:

  • 2 cups thinly sliced russet or Yukon gold potatoes
  • 1 1/2 cups shredded cheddar cheese
  • Fresh parsley, for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Brown ground beef with chopped onion in a skillet. Season with salt, pepper, and paprika. Drain excess fat.
  3. In a bowl, mix cream of mushroom soup, milk, and sour cream until smooth.
  4. Spread cooked beef in the bottom of a greased 9×13 baking dish.
  5. Layer thinly sliced potatoes evenly over the beef.
  6. Pour the creamy mixture over the potatoes, spreading to cover.
  7. Sprinkle shredded cheddar cheese over the top.
  8. Cover with foil and bake for 45 minutes.
  9. Remove foil and bake an additional 15 minutes until top is golden and bubbly.
  10. Let rest 5–10 minutes before serving. Garnish with parsley.

Notes

  • Slice potatoes thin (about 1/8 inch) for even cooking.
  • Substitute ground turkey or lentils for a lighter version.
  • Refrigerate leftovers for up to 4 days; freeze for up to 2 months.
