Creamy Chicken Penne Pasta is a rich and creamy one-pan dinner featuring chicken, mushrooms, and asparagus. Ready in just 35 minutes, it’s perfect for busy weeknights.

Ingredients

Pasta and Protein

  • 12 oz penne pasta
  • 1 pound boneless, skinless chicken breast, diced into bite-sized chunks

Fresh Vegetables

  • 1 cup mushrooms, sliced nice and thick
  • 1 cup fresh asparagus, trimmed and cut into 1-inch pieces

Seasonings and Oil

  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and freshly ground black pepper to taste

Creamy Sauce

  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese, plus extra for serving

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil and cook the penne until al dente. Drain and set aside.
  2. Sear the Chicken: Heat olive oil in a skillet, season chicken, and cook until golden brown and cooked through.
  3. Add Vegetables: Add mushrooms and asparagus, cook until tender.
  4. Make the Sauce: Pour in cream, simmer, then stir in Parmesan until smooth.
  5. Combine: Add pasta, toss to coat in sauce.
  6. Serve: Serve hot with extra Parmesan.

Notes

  • Feel free to swap asparagus for broccoli or spinach.
  • Save pasta water for thinning the sauce.
  • Best served fresh but leftovers keep well for up to 3 days.
  • When reheating, add cream or broth for creaminess.
