  • 2 tbsp olive oil
  • 1 1/2 lb Springer Mountain Farms chicken breast
  • 1 1/2 tsp paprika
  • 1 1/2 tsp oregano
  • 1 tsp garlic powder
  • 1/2 tsp thyme
  • 1/2 tsp black pepper
  • 1/2 tsp salt

Pasta

  • 12 oz gluten free farfalle pasta

Sauce

  • 4 tbsp butter
  • 2 tsp dry shallots
  • 2 tsp Italian seasoning
  • 1/2 cup chicken broth
  • 2 tbsp Gluten Free 1:1 Flour
  • 3 cups heavy cream
  • 12 oz shredded parmesan cheese
  • 1/4 cup reserved pasta water
  • 1/2 tsp salt
  • 1 tsp garlic powder

Instructions

  1. Boil Pasta: Bring a large pot of water to a boil and cook the gluten-free farfalle pasta according to the package directions until al dente. Drain and reserve 1/4 cup pasta water for later.
  2. Mix Chicken Seasonings: In a small bowl, combine paprika, oregano, garlic powder, thyme, salt, and black pepper thoroughly.
  3. Pound Chicken: Pound the chicken breasts to slightly thin them out for even cooking.
  4. Season Chicken: Coat both sides of the chicken breasts evenly with the mixed seasoning blend.
  5. Heat Oil: In a large skillet or sauté pan, heat olive oil over medium heat until shimmering.
  6. Sear Chicken: Place the seasoned chicken breasts into the hot pan and sear for about 5 minutes on each side until golden brown.
  7. Cook Chicken Thoroughly: Reduce heat to medium-low, cover the pan with a lid, and let the chicken cook for an additional 10-12 minutes until the internal temperature reaches 165°F (74°C).
  8. Remove Chicken: Transfer the cooked chicken breasts to a cutting board to rest while you prepare the sauce.
  9. Melt Butter: Add butter to the same pan and allow it to melt completely over medium heat.
  10. Sauté Seasonings: Stir in dry shallots, garlic powder, and Italian seasoning; cook and stir for about one minute until fragrant.
  11. Add Flour: Sprinkle in gluten-free flour and stir vigorously to form a roux, scraping the pan bottom to incorporate any browned bits.
  12. Add Liquids: Slowly pour in chicken broth and heavy cream, whisking continuously to create a smooth and creamy sauce base.
  13. Incorporate Cheese: Add shredded Parmesan cheese and stir until fully melted and the sauce is thickened.
  14. Simmer Sauce: Let the sauce cook gently while stirring occasionally, until it reaches your desired consistency.
  15. Toss Pasta: Add the cooked pasta to the sauce and toss thoroughly to coat evenly.
  16. Adjust Sauce Consistency: Gradually add reserved pasta water, one tablespoon at a time, to thin the sauce if needed.
  17. Slice Chicken: Slice the rested chicken breasts into pieces or strips.
  18. Combine Chicken & Pasta: Add the sliced chicken to the pasta and gently stir to incorporate.
  19. Serve: Plate the creamy chicken garlic Parmesan pasta immediately and enjoy.
