Creamy Chicken and Broccoli Pasta is a delicious and comforting dish that combines tender chicken, fresh broccoli, and a rich, creamy sauce over perfectly cooked pasta. It’s a crowd-pleaser and perfect for a quick weeknight dinner or a cozy weekend meal.

Ingredients

Pasta:

  • 12 oz (340 g) penne, fettuccine, or your favorite pasta

Broccoli:

  • 2 cups broccoli florets, fresh or frozen

Chicken:

  • 2 medium chicken breasts, cut into bite-sized pieces
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp paprika
  • Salt and pepper to taste

Sauce:

  • 2 tbsp olive oil or unsalted butter
  • 3 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 2 cups (500 ml) whole milk (or heavy cream for extra richness)
  • ½ cup (120 ml) chicken broth
  • ½ cup grated Parmesan cheese, plus extra for garnish
  • 1 tsp Italian seasoning
  • Pinch of red chili flakes (optional)
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta and Broccoli: Bring a large pot of salted water to a boil. Cook the pasta as per package instructions. Add broccoli florets in the last 3 minutes of cooking. Drain together.
  2. Cook the Chicken: Season chicken with spices. Cook in a skillet until golden. Set aside.
  3. Make the Creamy Sauce: In the same skillet, melt butter, sauté garlic, add flour, then gradually add milk and broth. Stir in cheese, seasonings, and chili flakes. Simmer until thickened.
  4. Combine Everything: Add chicken, pasta, and broccoli to the sauce. Toss to coat evenly.
  5. Serve: Transfer to plates, garnish with Parmesan and pepper.

Notes

  • For a Lighter Version: Use 2% milk and reduce butter for the sauce.
  • Add More Veggies: Mushrooms, spinach, or cherry tomatoes can be added.
  • Protein Alternatives: Shrimp or turkey can substitute chicken.
