Ingredients
Linguine:
4 oz. linguine, cooked in boiling salt water
Cajun Cream Sauce:
2 Tbsp. butter
1 Tbsp. minced garlic
1 Tbsp. minced shallot
1 Tbsp. Cajun seasonings
1/4 cup white wine
1 Tbsp. freshly squeezed lemon juice
1/3 cup heavy cream
1/3 cup half and half
1/4 cup freshly grated parmesan
Freshly cracked black pepper to taste
Garnish:
Chopped chives or green onions
Instructions
Boil Linguine: Cook linguine in salted water until al dente, then drain.
Prepare Cajun Cream Sauce: In a saucepan, melt butter over medium heat. Add shallot, garlic, and Cajun seasonings. Stir for a minute. Add white wine and cook for 3-4 minutes. Add lemon juice and cook for another minute. Stir in heavy cream and half and half. Cook for 4-5 minutes until thickened. Remove from heat, mix in parmesan and pepper.
Combine and Garnish: Toss cooked linguine in the sauce. Garnish with chopped chives or green onions.
Notes
If you prefer more sauce, use 1/2 cup each of half and half and heavy cream.
Cajun seasoning is salty, so adjust pepper to taste carefully.
