Finished with perfectly cooked eggs, garlic croutons, and fresh herbs, this 35-minute recipe serves 4 and brings rustic French flavors to your table.

Ingredients

Soup Base

  • 1 medium yellow onion, finely chopped
  • 20 cloves garlic, minced (about 1/3 cup)
  • 3 tablespoons olive oil (for sautéing)
  • Chicken broth, approximately 4 cups

Eggs

  • 4 eggs
  • 2 tablespoons olive oil (for cooking eggs)

Garnish

  • Garlic croutons (for garnish)
  • Chives, snipped (for garnish)
  • Fresh sage, chopped (for garnish)
  • Freshly ground pepper (to taste)

Instructions

  1. Heat oil and sauté onions: Heat 2 tablespoons of olive oil in a soup pot over low flame. Add the finely chopped onion and sauté lightly until translucent, ensuring the onions soften but do not brown too much.
  2. Add garlic and cook gently: Add the minced garlic to the onions and cook gently, stirring frequently to avoid browning the garlic which can cause bitterness.
  3. Simmer with chicken broth: Pour in approximately 4 cups of chicken broth and bring the mixture to a simmer. Allow it to cook gently for 20 minutes so the flavors meld perfectly.
  4. Cook the eggs: In a separate pan, heat the remaining 2 tablespoons of olive oil. Cook the eggs to your preferred doneness – either lightly fry or poach them gently to keep a soft texture.
  5. Prepare bowls with croutons: Place a handful of garlic croutons at the bottom of each soup bowl to add crunch and garlic flavor.
  6. Ladle soup over croutons: Carefully ladle the hot garlic soup over the croutons in each bowl.
  7. Add eggs and garnish: Top each serving with one cooked egg. Finish with a garnish of snipped chives, freshly chopped sage, and a few grinds of fresh pepper to enhance aroma and taste.

Notes

  • Be careful not to brown the garlic when cooking to maintain a smooth, mild garlic flavor.
  • Use fresh chicken broth for the best depth of flavor, or substitute with vegetable broth for a lighter taste.
  • Garlic croutons can be made by sautéing small bread cubes in garlic butter until crispy or using store-bought garlic croutons.
  • Poaching the eggs in broth instead of frying is a great alternative for a lighter option.
  • This soup pairs well with a crisp white wine or a light rustic bread on the side.
