Ingredients

Pasta

  • 8 oz pasta

Sauce

  • 1 cup full-fat cottage cheese (whole milk)
  • 3/4 cup whole milk
  • 1/2 cup shredded parmesan cheese
  • 1 tsp cornstarch
  • 1 tsp garlic powder
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Cook the Pasta: Cook the pasta according to the package directions until al dente. Drain and set aside.
  2. Prepare the Sauce Mixture: In a blender, combine cottage cheese, whole milk, parmesan cheese, cornstarch, garlic powder, dried oregano, and dried basil. Blend until the mixture is completely smooth and creamy.
  3. Heat the Sauce: Pour the blended cottage cheese mixture into a large pan over low heat. Warm the sauce slowly for about 5 minutes, stirring occasionally, until it reaches your desired temperature and consistency.
  4. Toss Pasta with Sauce: Add the cooked pasta to the pan with the alfredo sauce. Toss thoroughly to coat the pasta evenly with the sauce. Season with salt and black pepper to taste.
  5. Serve: Plate the pasta and optionally garnish with extra fresh parmesan cheese, chopped fresh parsley, and a sprinkle of cracked black pepper for added flavor and presentation. Enjoy immediately.

Notes

  • Using full-fat cottage cheese provides a creamier texture suitable for Alfredo sauce.
  • The cornstarch helps to thicken the sauce without needing heavy cream.
  • Adjust seasoning at the end to suit your taste preference.
  • This recipe serves 4 and works well with any pasta shape.
  • For a lighter version, reduce the amount of parmesan or substitute with a lower-fat cheese.
