This classic recipe for Corned Beef & Cabbage is a comforting and hearty dish perfect for a family dinner or St. Patrick’s Day celebration. Tender corned beef, flavorful vegetables, and savory broth come together in a slow cooker for a delicious one-pot meal.

Ingredients

Corned Beef & Vegetables:

  • 4 Large carrots, chopped into large pieces
  • 6 Medium russet potatoes, quartered
  • 1 yellow onion, peeled and quartered
  • 2 teaspoons minced garlic
  • 1 (4 pound) corned beef brisket
  • 3 cups of beef broth
  • 1 Tablespoon salt
  • 2 teaspoons fresh pepper

Additional:

  • 1/2 head of cabbage, coarsely chopped (optional)

Instructions

  1. Place vegetables in slow cooker: Place carrots, potatoes & onion on the bottom of your crock pot.
  2. Add garlic: Top vegetables with minced garlic.
  3. Pour in broth: Pour in the beef broth.
  4. Prepare brisket: Rinse off brisket and trim excess fat if desired.
  5. Layer brisket: Place brisket on top of vegetables.
  6. Season: Sprinkle on the spices that came with brisket, salt, and pepper.
  7. Cook: Cook brisket on low for 8 hours until it reaches 190-205°F.
  8. Add cabbage: Add cabbage 1 hour before serving.
  9. Rest and serve: Let brisket rest before slicing and serving.
