A simple and flavorful recipe for Coconut Rice that is fragrant, slightly sweet, and pairs perfectly with a variety of dishes. The combination of coconut milk and jasmine rice creates a creamy and aromatic side dish that will elevate any meal.

Ingredients

Main Ingredients:

  • 2 cups jasmine or long grain white rice
  • 1 can (14 ounce) coconut milk
  • 1 cup water (or coconut water for more intense coconut flavor)
  • 1/2 tsp sea salt
  • 1 tsp sugar, optional

Garnish:

  • cilantro, minced for garnish
  • toasted coconut flakes, for garnish

Instructions

  1. Add Ingredients: In a large saucepan, combine rice, coconut milk, water (or coconut water), sea salt, and optional sugar. Bring to a boil over high heat.
  2. Simmer: Once boiling, reduce heat to a simmer, cover, and cook for 20-25 minutes or until the liquid is absorbed and the rice is tender.
  3. Fluff and Rest: Remove from heat, fluff the rice with a fork, cover, and let it rest for 10 minutes to redistribute moisture.
  4. Adjust Seasoning: Taste and add more salt if needed. Garnish with cilantro and toasted coconut flakes before serving.
  5. Storage: Store leftovers in the refrigerator for up to 5-6 days or in the freezer for up to 1 month. Reheat before serving.

Notes

  • For a richer coconut flavor, use coconut water instead of regular water.
  • You can customize this dish by adding in toasted nuts or dried fruits for extra texture and flavor.
  • Ensure the rice is simmering gently to prevent it from cooking too quickly and becoming mushy.
