These Cinnamon Sugar Churro Cookies are a delightful twist on traditional churros, in cookie form. With a buttery, cinnamon-scented dough rolled in a sweet cinnamon sugar coating, these cookies are a perfect treat for any occasion.

Ingredients

For the Cookies:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 tsp ground cinnamon

For the Cinnamon Sugar Coating:

  • ½ cup granulated sugar
  • 2 tsp ground cinnamon

Instructions

  1. Preheat oven: Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream butter and sugar: In a large bowl, cream butter and sugar until light and fluffy. Add eggs and vanilla, mixing until combined.
  3. Prepare dry ingredients: In another bowl, whisk flour, baking powder, salt, and cinnamon. Gradually add dry ingredients to wet, mixing just until combined.
  4. Form dough balls: Form dough into 1-tablespoon balls and place on prepared baking sheet with space between.
  5. Coat with cinnamon sugar: Mix sugar and cinnamon for coating in a small bowl. Roll each dough ball in cinnamon sugar until coated.
  6. Bake: Bake for 10–12 minutes, until edges are lightly golden. Let cool on baking sheet for a few minutes before transferring to a wire rack.
