1½ cups all-purpose flour
¾ cup unsweetened cocoa powder
1½ teaspoons baking powder
½ teaspoon salt
½ cup vegetable oil
1 cup light brown sugar, packed
3 large eggs
½ teaspoon vanilla extract
¼ teaspoon almond extract
Coating:
½ cup powdered sugar
Instructions
In a medium mixing bowl, combine all-purpose flour, cocoa powder, baking powder, and salt. Use a whisk to mix.
In another medium mixing bowl, mix vegetable oil, light brown sugar, eggs, vanilla extract, and almond extract. Combine well.
Add the dry ingredients to the wet ingredients and mix until combined.
Cover the bowl with plastic wrap and refrigerate for at least 1 hour.
Preheat the oven to 350°F and line a baking sheet with parchment paper.
Scoop the chilled dough into 1-tablespoon balls and roll in powdered sugar.
Place the balls on the baking sheet and bake for 10 minutes.
Let the cookies cool on a wire rack before serving.
