These extra light and fluffy Chocolate Chip Pudding Cookies are a crowd-pleaser, thanks to the addition of pudding in the dough. A perfect balance of sweetness and texture, these cookies will satisfy any sweet tooth.

Ingredients

For the Cookie Dough:

  • 1 cup unsalted butter, room temperature
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • 2 eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2½ cups all-purpose flour
  • 3.4 ounces instant vanilla pudding mix
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1½ cups semi-sweet chocolate chips

Instructions

  1. Cream the Butter and Sugars: In a large mixing bowl, cream together the butter, brown sugar, and granulated sugar for 1 to 2 minutes.
  2. Add Eggs and Vanilla: Mix in the eggs, one at a time, followed by the vanilla extract.
  3. Combine Dry Ingredients: In a separate bowl, mix the flour, pudding mix, baking powder, baking soda, and salt.
  4. Blend Wet and Dry Mixtures: Slowly add the dry ingredients to the wet mixture until just combined.
  5. Add Chocolate Chips: Gently fold in the chocolate chips.
  6. Chill the Dough: Refrigerate the dough for 30 minutes.
  7. Preheat and Bake: Preheat the oven to 350°F. Scoop dough onto a baking sheet and bake for 10 minutes.
  8. Cool and Enjoy: Let the cookies cool on a rack before serving.

Notes

  • Use instant pudding mix, not the cook-and-serve variety.
  • Add the pudding mix dry, without making the pudding.
  • If the dough is too firm, let it sit at room temperature briefly.
