Chicken Tostadas are a delicious Mexican-inspired dish featuring oven-baked tostada shells topped with refried beans, seasoned chicken, cheese, lettuce, homemade pico de gallo, and sour cream.

Ingredients

Tostada Shells:

  • 8 tostada shells

Seasoned Chicken:

  • 2 cups (280 g) rotisserie chicken, shredded and cubed, divided
  • 2 tablespoons taco seasoning

Refried Beans:

  • 1 can (16 ounces) refried beans, divided

Cheese:

  • 1 cup (113 g) Mexican blend cheese, shredded, divided

Lettuce:

  • 2 cups (94 g) iceberg lettuce, shredded, divided

Pico de Gallo:

  • 1 cup (248 g) pico de gallo, divided

Sour Cream:

  • ½ cup (115 g) sour cream, divided

Garnish:

  • freshly squeezed lime juice
  • cilantro, for garnish

Instructions

  1. Preheat oven: Preheat oven to 325°F. Line a large baking sheet with parchment paper.
  2. Prepare tostada shells: Spray both sides of the tostadas with cooking spray and place in a single layer on the baking sheet. Bake for about 5 minutes until warm and slightly crisp.
  3. Season chicken: Toss shredded chicken with taco seasoning in a bowl.
  4. Heat refried beans: Heat refried beans in a saucepan over medium-low heat until hot.
  5. Assemble tostadas: On each tostada, spread refried beans, top with seasoned chicken, shredded cheese, lettuce, pico de gallo, sour cream, and lime juice.
  6. Serve: Garnish with cilantro and serve immediately.
