Ingredients

Chicken:

  • 1 lb (450g) boneless, skinless chicken breasts or thighs, sliced into thin strips

Sauce:

  • 2 tablespoons olive oil or butter
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup (240ml) chicken broth
  • 1 cup (240ml) sour cream
  • 1 cup (240ml) mushrooms, sliced (optional)
  • 1 tablespoon all-purpose flour
  • 1 tablespoon Dijon mustard
  • 1 teaspoon paprika
  • Salt and pepper to taste

Garnish:

  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the Chicken: Heat the olive oil or butter in a large skillet over medium heat. Add the chicken strips and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  2. Prepare the Sauce: In the same skillet, add a bit more oil or butter if needed, and sauté the onions until translucent, about 3-4 minutes. Add the garlic and cook for an additional 1 minute until fragrant. If using mushrooms, add them to the skillet and cook until softened.
  3. Make the Stroganoff Sauce: Sprinkle the flour over the onion and garlic mixture, stirring to combine and cook for 1-2 minutes. Gradually add the chicken broth, stirring constantly to avoid lumps. Stir in the Dijon mustard and paprika, and bring the mixture to a simmer.
  4. Combine and Finish: Return the cooked chicken to the skillet and simmer for about 5 minutes, allowing the sauce to thicken. Reduce the heat to low and stir in the sour cream until well combined. Heat through but do not boil to prevent the sour cream from curdling. Season with salt and pepper to taste.
  5. Serve: Garnish with fresh parsley if desired. Serve over egg noodles, rice, or mashed potatoes.
