This quick and easy Chicken Stir Fry recipe is a flavorful dish packed with tender chicken and colorful vegetables in a delicious honey-soy sauce. Perfect for a speedy weeknight dinner!

Ingredients

For the Chicken:

  • 1 lb boneless, skinless chicken breast, cut into 1-inch cubes
  • Salt and pepper to taste
  • 2 tbsp olive oil, divided

For the Vegetables:

  • 2 cups broccoli florets
  • 1/2 yellow bell pepper, cut into 1-inch pieces
  • 1/2 red bell pepper, cut into 1-inch pieces
  • 1/2 cup baby carrots, sliced
  • 2 tsp minced ginger
  • 2 garlic cloves, minced

For the Stir Fry Sauce:

  • 1 tbsp cornstarch
  • 2 tbsp cold water
  • 1/4 cup low-sodium chicken broth
  • 3 tbsp low-sodium soy sauce
  • 1/4 cup honey
  • 1 tbsp toasted sesame oil
  • 1/2 tsp crushed red pepper flakes

Instructions

  1. Prepare the Stir Fry Sauce: In a medium bowl, whisk together cornstarch and water. Add chicken broth, soy sauce, honey, toasted sesame oil, and red pepper flakes. Set aside.
  2. Cook the Chicken: Heat 1 tablespoon of oil in a large skillet over medium-high heat. Cook chicken seasoned with salt and pepper until cooked through, about 3-5 minutes. Remove from skillet.
  3. Cook the Vegetables: Reduce heat to medium, add remaining oil to the skillet. Cook broccoli, bell peppers, and carrots until crisp-tender. Add ginger and garlic, cook for 1 minute.
  4. Combine and Finish: Return chicken to the skillet. Pour the stir fry sauce over chicken and vegetables. Bring to a boil and let simmer for 1 minute.
  5. Serve: Serve hot with rice or chow mein.
