This hearty and delicious Chicken Florentine Soup is reminiscent of Olive Garden’s recipe but made in the slow cooker. Packed with chicken, potato, white beans, carrots, spinach, and a creamy cheese base, it’s a comforting meal that is easy to prepare.

Ingredients

For the Soup:

  • 29 oz chicken broth
  • 3 cups shredded chicken
  • 3 tsp Italian Seasoning
  • 2 tsp paprika
  • 1 tsp salt
  • 4 carrots, peeled and diced
  • 29 oz diced tomatoes with juice from can
  • 2 cups water
  • 15 oz white beans, drained
  • 6 red potatoes, diced
  • 3 cups fresh spinach, chopped
  • 8 oz cream cheese
  • 2 cups mozzarella cheese, shredded

Instructions

  1. Prepare the Soup Base: In the slow cooker, combine chicken, broth, Italian seasoning, paprika, salt, diced tomatoes, carrots, potatoes, white beans, and water. Cook on LOW for 4½ – 5 hours or on HIGH for 2 – 3 hours.
  2. Add Creaminess: Stir in cream cheese until well combined. Cook for an additional 30 minutes.
  3. Introduce Spinach: Add chopped spinach and continue cooking for 20-30 more minutes.
