Cheese Stick Cookies are delightful savory treats that combine the buttery richness of shortbread with the sharpness of cheddar cheese. These crispy, cheesy cookies are perfect for snacking or as accompaniments to soups and salads.

Ingredients

Dry Ingredients:

  • 200g (1¾ cups) all-purpose flour
  • 50g (½ cup) cornstarch
  • ½ tsp salt
  • ½ tsp baking powder

Butter Mixture:

  • 150g (⅔ cup) unsalted butter, softened
  • 2 egg yolks (plus 1 extra for egg wash)
  • 100g (1 cup) grated cheddar cheese (plus extra for topping)

Instructions

  1. Make the butter mixture: Beat butter and egg yolks until smooth. Stir in grated cheddar cheese.
  2. Mix dry ingredients: Combine flour, cornstarch, baking powder, and salt.
  3. Form the dough: Gradually add dry ingredients to the butter mixture. Mix until smooth.
  4. Shape the cookies: Roll out dough to 1 cm thick. Cut into small rectangular sticks.
  5. Add egg wash and cheese: Brush tops with extra egg yolk and sprinkle grated cheese.
  6. Bake: Place on a lined baking sheet and bake at 170°C (340°F) for 15-20 minutes, until golden brown.
  7. Cool and store: Let cool completely before storing in an airtight jar.
