Ingredients

Buffalo Chicken Filling

  • 1½ cups cooked chicken, shredded (rotisserie works great)
  • ¼ cup Buffalo wing sauce (adjust to taste)
  • 2 tbsp cream cheese, softened (for creaminess)
  • 1 tbsp ranch or blue cheese dressing (optional but delicious)
  • Black pepper, to taste

Sandwich

  • 4 slices sturdy bread (sourdough or thick white)
  • 2 cups shredded mozzarella or Monterey Jack cheese
  • Butter, softened (for grilling)
  • Chopped parsley (optional garnish)

Instructions

  1. Mix the filling: In a bowl, combine shredded chicken, Buffalo wing sauce, softened cream cheese, ranch or blue cheese dressing if using, and black pepper. Stir until the mixture is creamy and evenly coated with the sauce.
  2. Assemble: Butter one side of each slice of bread. Place two slices butter-side down on a flat surface. On each, layer cheese, then a generous portion of the Buffalo chicken mixture, followed by more cheese. Top with the remaining bread slices, butter-side up.
  3. Grill: Heat a skillet over medium-low heat. Place the sandwiches in the skillet and cook for 3 to 4 minutes per side, pressing gently with a spatula, until the bread is deeply golden and crispy and the cheese inside has melted completely. Adjust heat lower if the bread browns too quickly to ensure thorough melting without burning.
  4. Serve: Remove the sandwiches from the skillet and let them rest for 1 minute. Slice them in half, garnish with chopped parsley if desired, and serve hot.
