Ingredients

Wet Ingredients:

  • 2 cups cottage cheese (full-fat or low-fat)
  • 3 large eggs
  • ⅓ cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • ¼ cup unsweetened almond milk (or regular milk)

Dry Ingredients:

  • 1 cup rolled oats
  • ½ teaspoon ground cinnamon
  • ½ teaspoon baking powder
  • ¼ teaspoon salt

Additional:

  • 1 ½ cups fresh or frozen blueberries
  • 1 tablespoon melted butter or coconut oil (for greasing)

Instructions

  1. Step 1: Prep Your Oven & Pan – Preheat oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  2. Step 2: Mix Wet Ingredients – Whisk together cottage cheese, eggs, honey/maple syrup, vanilla extract, and almond milk.
  3. Step 3: Add Dry Ingredients – Stir in oats, cinnamon, baking powder, and salt until combined.
