Succulent, juicy chicken breasts are blackened to perfection and paired with cajun-seasoned garlicky luscious alfredo sauce. This is one easy 30-minute meal that will leave your taste buds dancing with delight.

Ingredients

Main Ingredients:

  • 1 lb. Mafaldine noodles (or fettuccini/linguini noodles)
  • 3 chicken breasts
  • 4 tablespoons olive oil
  • 6 tablespoons butter
  • 68 cloves garlic, minced
  • 2 cups heavy whipping cream
  • 1.5 cups shredded parmesan cheese
  • 4 tablespoons blackened seasoning, divided recipe is below
  • Salt and pepper to taste

Homemade Blackened Seasoning:

  • 2 tablespoons smoked paprika (regular paprika works too)
  • 1 tablespoon cayenne pepper
  • 1 tablespoon onion powder
  • 2 teaspoons garlic powder
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano

Instructions

  1. Pound and Season Chicken: Pound chicken to an even 1/4 inch thickness, rub them with oil, and season liberally on both sides.
  2. Cook Chicken: Heat a skillet over medium-high heat. Add oil and cook chicken for 3-4 minutes per side until cooked through.
  3. Make Alfredo Sauce: In the same skillet, melt butter, sauté garlic, stir in cream, blackened seasoning, and parmesan. Simmer until thickened.
  4. Prepare Noodles: Cook noodles al dente, reserving pasta water.
  5. Combine: Add cooked noodles to the sauce, mix well, and serve topped with sliced chicken and extra cajun seasoning.

Notes

  • You can adjust the level of spiciness by reducing or increasing the amount of cayenne pepper in the blackened seasoning.
  • Feel free to add some cooked vegetables like bell peppers or broccoli to the dish for added color and nutrition.
