Instructions

  1. Preheat oven and prepare dish: Preheat your oven to 350°F (175°C) and lightly spray a 1 1/2 quart baking dish with cooking spray to prevent sticking. Set aside.
  2. Mix creamy ingredients: In a large bowl, use an electric mixer to blend the mayonnaise, Thousand Island dressing, and softened cream cheese until the mixture is smooth and fully combined, creating the creamy base of the dip.
  3. Combine sauerkraut, meat, and cheese: Thoroughly squeeze excess moisture from the sauerkraut to avoid sogginess. Add the sauerkraut, chopped corned beef, and 1 ½ cups of shredded Swiss cheese to the creamy mixture. Stir by hand gently until everything is evenly incorporated.
  4. Assemble in baking dish: Pour the combined mixture evenly into the prepared baking dish. Then sprinkle the remaining ½ cup of Swiss cheese evenly over the top for a nice melty crust.
