Ingredients

Canned Tomatoes:

  • 1 can (28 oz) whole tomatoes with juice

Rotel Tomatoes and Chilies:

  • 2 cans (10 oz each) Rotel diced tomatoes and green chilies

Seasonings and Herbs:

  • 1/4 cup chopped onion
  • 1 clove garlic, minced
  • 1 whole jalapeno, quartered and sliced thin
  • 1/4 teaspoon sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cumin
  • 1/2 cup chopped cilantro (more to taste!)
  • Juice of 1/2 lime

Instructions

  1. Combine Tomatoes: In a large mixing bowl, mix the whole tomatoes with their juice and the Rotel diced tomatoes and green chilies.
  2. Add Ingredients: Add onion, garlic, and jalapeño to the bowl.
  3. Season: Sprinkle in sugar, salt, and cumin. Mix well.
  4. Include Cilantro: Gently fold in cilantro to taste.
  5. Finish with Lime Juice: Squeeze in lime juice and mix.
  6. Adjust Seasoning: Taste and adjust with more lime juice, salt, or cilantro if desired.
  7. Allow to Sit: Let the salsa sit for at least 30 minutes for flavors to meld.

Notes

  • For a spicier salsa, leave the jalapeño seeds in or add more jalapeños.
  • Store any leftovers in an airtight container in the refrigerator for up to 5 days.
