A gooey, savory fusion of grilled cheese and burrito—melty cheese and hearty fillings wrapped in a crispy tortilla for the ultimate comfort food.

Ingredients

  • 2 large flour tortillas
  • 4 slices cheddar cheese (or any preferred melting cheese)
  • 1 cup cooked protein (shredded chicken, seasoned ground beef, or black beans)
  • 1/2 cup sautéed vegetables (onions, bell peppers)
  • 2 tablespoons butter or oil for grilling
  • Optional: sliced avocado, jalapeños, sour cream, salsa

Instructions

  1. Lay a tortilla flat and layer cheese across the center.
  2. Add cooked protein and sautéed veggies on top of the cheese.
  3. Finish with another layer of cheese, fold the sides inward, and roll tightly into a burrito.
  4. Heat a skillet over medium heat and add butter or oil.
  5. Place the burrito seam-side down and grill until golden brown, about 2–3 minutes.
  6. Flip and grill the other side until crisp and the cheese is fully melted.
  7. Remove from skillet, let rest for a minute, then slice and serve with salsa, sour cream, or guacamole.

Notes

  • Use your favorite melting cheese for varied flavor.
  • Customize fillings to suit dietary needs or preferences.
  • To make ahead, assemble and store in the fridge or freezer before grilling.
  • Reheat leftovers in a skillet or oven to maintain crispiness.
