This BBQ Chicken Soup recipe brings all the flavors of a backyard barbecue into a warm and comforting soup. It’s smoky, hearty, and perfect for a cozy night in.

Ingredients

For the Seasoned Chicken:

  • 1 ½ lb chicken breast, cut into bite-sized pieces
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper

For the Soup:

  • 2 tablespoons olive oil, divided
  • 1 medium onion, diced
  • 1 medium carrot, diced
  • 1 medium red bell pepper, diced
  • 2 large garlic cloves, roughly chopped
  • 1 cup BBQ sauce
  • 1 can (14 oz / 400g) pinto beans, drained and rinsed
  • 1 can (7 oz / 200g) sweetcorn, drained and rinsed
  • 4 cups chicken stock
  • ½ cup fresh parsley, roughly chopped

Instructions

  1. Season the Chicken: In a bowl, combine the chicken bites with garlic powder, smoked paprika, oregano, salt, and pepper. Toss to coat evenly.
  2. Brown the Chicken: Heat 1 tablespoon of olive oil in a large pot over medium heat. Add chicken and cook until browned. Set aside.
  3. Sauté Vegetables: Add remaining olive oil to the pot. Sauté onion, carrot, and bell pepper until softened. Add garlic and cook until fragrant.
  4. Cook the Soup: Return chicken to the pot. Stir in BBQ sauce, beans, sweetcorn, and chicken stock. Bring to a boil, then simmer for 10 minutes.
  5. Finish and Serve: Stir in parsley, adjust seasoning, and serve hot with red onion and parsley garnish.
